COURSE OVERVIEW
Are you passionate about patisserie? Are you creative, imaginative, and love working with your hands in an artistic manner? If so then this is the course for you! This course is designed for those who are looking to gain fundamental skills within the patisserie industry and achieve a nationally recognised qualification. You will work in our state of the art kitchens, preparing food, as well as visiting and working alongside visiting chefs from the industry. We run a commercial hospitality operation within the college which give students plenty of enterprise opportunities to prepare for their future. You will complete a level 2 food safety in catering qualification within your first term at college if you do not already hold this. Evidence of prior achievement (certificate) will need to be produced on the first day of induction for exemption. All of the hospitality lecturers here at Chichester College are passionate about training others and they have all worked for many years within the industry in a diverse range of job roles including the Army and Navy as chefs, hotel, restaurant and nightclub managers, events and wedding coordinators and patisserie chefs. The study program of all learners under the age of 19 will include Math and English if you have not already achieved a grade 4 GCSE in these subjects.
FURTHER INFORMATION
You will need 4 GCSEs including a Food Tech GCSE at grade 4 or above and either English or Maths at 4 or above. The remaining 2 required GCSEs should be a grade 3 or above. Progression from completion of full study programme Level 2 in hospitality/catering, also GCSE Grade 4 in either English or Maths and 95% attendance. 19+ Adult Leaner successful application and Interview.
Upon completion of the level 2 qualification, learners will be invited to apply for the Level 3 Patisserie and Confectionery Diploma. Other alternatives to the level 3 qualifications include a level 2/3 course in professional cookery an apprentice program, or full time work
Learners will be assessed on each unit over the course of the year by completing short answer theory papers. Once completed, learners will then sit a timed practical exam where they will be expected to produce patisserie products in line with the unit criteria. There will be 5 practical exams throughout the year including a final 3 hour final exam bringing together a range of dishes that you will have perfected during practice. The level 2 award in food safety is assessed by a 30 question multiple choice exam.
All candidates studying the course will be required to purchase a full hospitality uniform which includes kitchen uniform, essential patisserie equipment and text book. This is purchased through our partner suppliers at a cost of approximately £300. Financial support is available to those who are eligible which will cover the cost of the uniform, you can find out more in the College Life section of our website. There is an additional cost of £80 for consumable items used over the duration of the course which is payable at enrolment.
