Exciting Culinary Collaboration: Chichester College Students Join Forces with The Exclusive Collection Chefs

Chichester College hospitality and catering students enjoyed an incredible chance to team up with chefs from Exclusive Collection recently.
The Exclusive Collection are renowned for their collection of privately owned luxury hotels.
Professional chefs from locations such as South Lodge, Pennyhill Park, Lainston House, Manor House, and Royal Berkshire joined forces with students to craft an exquisite 3-course meal for guests at Chichester College’s 64 Restaurant, showcasing a fusion of talent and expertise.
The menu featured delightful creations, including gin-cured Test trout with lemon cucumber, horseradish, and chive for starters, followed by lamb saddle with braised belly, salt-baked celeriac, puree, and mint for mains. To finish on a sweet note, guests indulged in vanilla Creme Brule with rhubarb, caramel, and apple for dessert.
For Exclusive Collection chef Charlie Cutting, the evening marked a return to his old college – having studied at Chichester College before embarking on his culinary career.
He revealed: “Having been on the receiving end of such opportunities, I understand the value of learning from experienced professionals. Being given the opportunity to work in five-star hotels, you are always learning. The college help you every step of the way.
“Now, returning to lead this kitchen, I see how much I have grown and appreciate the chance to give back to the next generation of chefs.”
This collaboration not only provides students with hands-on experience but also fosters a culture of learning and growth within the culinary community.
