COURSE OVERVIEW
Join us for an enchanting day indulging in festive Christmas treats making your own unique luxurious gifts for friends and family. You will learn how to make:
- Professional ‘Bakers Dozen’; Stylish Luxurious All Butter Cognac Mince Pies Learn to make, French butter sweet orange pastry, made into ‘Pate a Sucre’; for the ultimate pastry that freezes ahead. Learn to decorate for the countdown to Christmas to impress your friends. Freeze ahead for the 25th December if they last this long. Learn tricks of the trade.
- Traditional Spiced Ginger Advent Biscuits Decorated For The Festive Season. Beautifully baked, crisp and soft Moorish biscuits beautifully iced or dipped in couverture.
- Belgian Chocolate Ganache Piped Into ‘Christmas Pudding Truffles and Yule Logs, learn tempered luxurious velvet chocolate coated and decorated with holly and berries in icing to impress your guests for the magical Christmastime.

• Icing Nozzles (PME 1.5 and PME No 2 stainless steel nozzles)
• Christmas cutters for the biscuits
• Pastry scraper
• Packaging for your beautiful gifts i.e. cake tins bags etc.
• Limited offerings to purchase food at the College suggested to bring in a packed lunch
• Hot and cold water available on demand
• pen to take notes.
Please wear sensible shoes (no open toed shoes such as sandals) leather shoes or trainers would be preferable. No loose clothing or accessories, legs are fully covered.
You will be in a professional training kitchen and require to adhere to health and safety procedures
